Fun Fresh Weekend Meal and Garden Tips
Whether you need to nice up the functionality of your composting or just bring a personal twist to your garden, get busy this weekend making art from refuse or (if thats too frou-frou for ya), have a hand at a "skid box" composting corner made from re-used palettes.
Once you've built up an appetite, try this easy upscale recipe.
No-Dough Pizza-in-a-Crock Serves 3-4 as a snack or light meal
- INGREDIENTS:
- Kale, chopped: 2 cups
- Asparagus, chopped: 2 cups
- Red bell pepper, roughly chopped
- Celery, chopped: .5 cups
- Tomato sauce or paste (or left-over green bean stew...)
- Braggs or soy sauce
- Muenster and Parm
- NITTY-GRITTY:
- Scald the first four ingredients in skillet, then add next two ingredients with a dash of water.
- Pre-heat oven to 350F. Reduce skillet heat to medium and cook a few minutes.
- Move skillet to oven. When up to temperature, remove and turn on broiler.
- Transfer portion of veg mix to a ramekin and cover with cheese of choice (Parm-only and parm-and-muenster versions shown below).
- Broil to perfection.
yummmm... Whenever I eat something that doesn't heavily feature veg, I feel like I wasted my time and my calorie allotment. This sort of meal makes everything ooookaaay
