The Perfect Salad

I love eating salads, but I don't think I'm that great at making them. With the recent and sudden heat, I've been scrambling for fast and nutritious sald-fixins' that I can use as a base for any meal of the day, when I'm either too busy or too hot to cook anything on the stove. Lucky for me (and all of the people reading this blog) I know a few Salad Pros.

spinach, arugula, and baby lettuces with mango, cashews, gorganzola, and olive oil/lemon dressing

It can be easy to order a salad at a restaurant and think you're making a healthier choice, but deep-fried meats, huge portions, heavy cheese and Ranch dressing  can easily turn that 'lighter fare' into more calories than the table-mate who orders a double-bacon-cheeseburger with fries. For some awesome salad ideas to try at home, check out 'Vegetarian Cooking for Everyone' by Deborah Madison. With summer here, you might be searching for a cool meal to make at home, too.
